Pimientos Rellenos de Pollo

Ingredientes
3 c. mozzarella rallada, dividida
1/2 c. queso parmesano recién rallado, y más para servir
3 dientes de ajo picados
1 cucharada. perejil recién picado, y más para decorar
Una pizca de hojuelas de pimiento rojo triturado
Sal kosher
Pimienta negra recién molida
12 onzas. pollo empanado fresco o congelado, cocinado de acuerdo con las instrucciones del paquete y cortado en cubitos
4 pimientos, cortados por la mitad y sin semillas
1/2 c. Caldo de pollo

  • Precalentar el horno a 400º. En un tazón grande, combine 2 tazas de mozzarella, parmesano, ajo, perejil y hojuelas de pimiento rojo y sazone con sal y pimienta. Revuelva hasta que esté combinado, luego doble suavemente el pollo.
  • Coloque la mezcla en pimientos cortados a la mitad y espolvoree con la 1 taza de mozzarella restante.
  • Vierta el caldo de pollo en una fuente para hornear (para que los pimientos se humeen) y cubra con papel aluminio.
  • Hornee hasta que los pimientos estén tiernos, de 55 minutos a 1 hora. Destape y ase 2 minutos.
  • Decorar con perejil y más queso parmesano antes de servir.
