Una vez viajé a Florida, la verdadera razón por la que estuve allí fue por el sol líquido, por así decirlo. Pasé unos días increíbles con el Departamento de Cítricos de Florida y un gran grupo de dietistas de todo el país, aprendiendo literalmente sobre el proceso de elaboración del jugo de naranja, desde la arboleda hasta el vaso.


La arboleda

Nuestra primera parada fue, lo adivinaste, un campo de naranjos. Principalmente naranjas de Valencia, en este caso. Si nunca te has parado en medio de un campo de naranjos en flor, te lo recomiendo encarecidamente. El aroma de los azahares en el aire es divino. Lo que no es divino son algunas de las luchas que atraviesan los productores de cítricos de Florida (la mayoría de los cuales son granjas familiares). Primero estaba el cancro de los cítricos, que parecía algo muy malo (provoca la caída de la fruta y las hojas y afecta la apariencia de la fruta, lo que dificulta su venta). Luego vino el enverdecimiento de los cítricos, que es peor.

El enverdecimiento de los cítricos es una enfermedad transmitida por el psílido asiático de los cítricos, que apareció por primera vez en China hace aproximadamente 100 años. El insecto fue detectado en Florida en 1998 y la enfermedad se confirmó en 2005. Esto afecta el sistema vascular del árbol, lo que significa que muchos de los nutrientes absorbidos por el sistema de raíces no pueden formar parte del árbol, y la energía recolectada por las hojas durante la fotosíntesis no pueden llegar hasta las raíces. Una parte importante del sistema de raíces del árbol termina muriendo y, con el tiempo, el árbol produce menos frutos y más pequeños hasta que finalmente muere. Los árboles de naranja y pomelo son más susceptibles, mientras que los árboles de limón y tilo se ven menos afectados.

A pesar de que productores de cítricos de diferentes regiones y países, ¿sabían que Brasil es el productor número uno de jugo de naranja a nivel mundial? ¡Y que los cultivadores de Florida les enseñaron cómo hacerlo! Están compitiendo por participación de mercado, están colaborando en la búsqueda de una cura para este virus nacido de insectos, compartiendo información y, en este punto, remedios caseros. Por ejemplo, a un productor de cítricos de Florida se le ocurrió la idea de alimentar a sus naranjos con la misma fórmula de fertilizante que se usa para cultivar fresas, y algo acerca de esa mezcla específica de oligoelementos ayudó a sus árboles a resistir mejor el daño del virus. Así que ahora, los productores de cítricos de todas partes están «alimentando con cuchara» sus árboles con nutrientes. También usan mantillo reflectante para hacer rebotar la luz del sol y confundir a los insectos. Debido a que los árboles bebés tienen pocas defensas naturales, se cubren con una malla fina a prueba de insectos hasta que tienen aproximadamente 3 años y están listos para dar fruto.

La agricultura es un trabajo bastante duro, pero luchar contra el enverdecimiento de los cítricos ha aumentado significativamente los costos de los productores (los productores solían gastar $ 800 por acre, ahora es más como $ 2,000 por acre) y algunas granjas familiares no están sobreviviendo. Ah, ¿y mencioné los estragos que causó el huracán Irma en las plantaciones de cítricos de Florida a principios de 2018? Érase una vez, tuve la idea romántica de comenzar una granja de pasatiempos. ¿A quién [bip] estaba engañando? La agricultura es un trabajo duro y financieramente peligroso, y los agricultores (también conocidos como las personas que cultivan nuestros alimentos) no reciben suficiente crédito ni respeto. Desde la arboleda, nos dirigimos a la empacadora, donde se reciben y clasifican naranjas y otros cítricos. La fruta inferior está destinada a convertirse en alimento para el ganado. La fruta «más bonita» se consume fresca. Más del 90 por ciento de las naranjas de Florida se procesan para obtener jugo, porque son muy adecuadas para ello. De hecho, Florida produce más de la mitad del jugo de naranja en este país y es el segundo productor más grande del mundo (después de Brasil).

Dato curioso: las naranjas verdes y los pomelos no están poco maduros. Una fruta cítrica puede estar en el pico de madurez, pero simplemente no desarrolló el color de cáscara esperado.

Los agricultores tienen mucho cuidado de cosechar solo fruta madura, porque necesita tener un cierto equilibrio de azúcar y ácido para cumplir con la definición estricta de lo que son los cítricos y los jugos de cítricos. Si habla del jugo de naranja de Florida, hay un poco más de margen, porque el jugo de naranjas que, por ejemplo, son un poco más ácidas se mezclan con jugo de naranjas que son un poco más dulces.
